Chicken and Dumblings


1 can low sodium cream of mushroom soup
1 can low sodium cream of chicken soup
1 cup chicken broth
1 rotisserie chicken, skin discarded and meat remved from bone
2-3 rolls of pillsbury croissane rolls, divided

Preheat oven to 400 degrees


Roll out the cans of croissant sheets and separate into diamond shaped sections. Place a small handful of rotisserie chicken on each diamond, fold dough over and press ends together to create dumplings. Cut up any excess dough into strips.

Line a 9x13" baking dish with one layer of dumplings. Pour the can of cream of chicken soup over the layer of dumplings, followed by the can of cream of mushroom soup, and chicken broth

Place strips in a crisscross pattern on the top of the dumplings and soup mixture, season dish with salt and ground black pepper and bake until the dumplings are tender and cooked through and the top is bubbly and brown, about 30 minutes.

Since Erick and I both have to work on Halloween.. booo... but we still wanted to buy Toby a costume.. this one ended up being a little to small, so he looks ridiculous.. but we still found it hilarous!

Tom Hartman Memorial

Today was the golf outing for uncle tom. It was a huge success and I was amazed by peoples generousity and kindness. Here are only a few of the many things that went on today. I wish i had taken more pictures! but hope you enjoy, in loving memory of uncle tom.

Who-a wantza pizza pie-a

We made homemade pizzas! So fun! We went to Pizza Plaza and bought some of their dough and came home to make pizzas of our own. Who says i never cook??

This past weekend was my mother-in-laws wedding up in Selinsgrove. Lets just say it was a hike! But it reminded me of the drive up to the mountains! Erick got to dress up in a tux and give his mother away. I wasnt able to take that many pictures, but the ones at the end are of Erick doing the YMCA and all the boys dressed in different hats. We had a ball of fun... next wedding.... Jess and Shawn!!!

We got Ezpass!

Erick has become a frequent turnpike driver now, due to his job. So i thought it was about time for Erick to fly through those tolls and get EZPASS!! Ive been waiting for it to come in the mail for days, and today it did! Now we have joined the rest of America with our new Ezpass!! lol

Toby's First Haircut

Toby was desperatly in need of a haircut! He looked like a little homeless puppy! So today was the day! He was actually really excited about it, which is the complete oppostie of going to the vet. But now he looks like the same Toby that we all know and love! I wonder if hes still 4 lbs without all of that fur!
